I've watched a few of those "off the grid" videos... usually those people are making money by, well, making those videos! They always seem to have few problems, and the rare problems they run into can be fixed within about a 20 minute video. Usually fixed by some tool or product they make sure to name in the video.
Also, some (more than a few, I think) are actually living on family land, but don't make it obvious in the videos.
"Camping" for a while in an old RV, especially a small one, is fun for a time. But living in an old, tight camper / van, possibly without a bathroom, may sound glamorous to you, but not to me. To each his own.
As many "full timers" (people who sell their house and live in an RV) in this forum advise, try just camping for long periods before actually selling everything to live in an RV.
Ace, you came here asking for advice, and got some. And you didn't like it. A lot of people here have been RV'ing for years / decades. If you don't want their advice, well, that's your choice. You state that you are a "positive" person - that is a good thing, please try to keep that in mind while participating in online forums.
Just have open eyes and be aware of what you are thinking of doing.
