If I can't safely use the fridge etc. on propane while traveling then I dang sure am not going to be sleeping in that death trap.......
Now that I've gotten that sarcasm out of the way, it's not in your manual because it's OK to run it on propane while traveling.
MFG. does make a mention about fridge operation while in transit that fridge doesn't need to be level cause the motion of rig causes the ammonia cooling solution to not accumulate in the piping. Fridge will function OK while traveling.
Caveat: Some folks turn fridge OFF prior to entering a station before refueling
