I always carry some water. One never knows when it will be needed. I run with about 10 gallons minimum which will get me by if need be. I also have multiple ways to fill water. In addition to my conventional hookup, I keep a 5 gallon collapsible jug I can hike water with. I have a water thief too (and a hose clamp if needed) if I want to hook up to an unthreaded faucet.
