Congrats!
You'll be re-organizing for a while still. Every time you go out, you'll find something else that just doesn't quite work where it's at. :) When you finally have it all figured out, you'll sit at the dinette table, looking around and thinking "I don't know what to do with myself - everything fits perfect."
For the cat, you might not need the timed dispenser. MOST cats won't overfeed themselves like dogs will - especially on dry food. They'll eat when they're hungry and sleep the rest of the time.
I have gone camping and done nothing but read the entire weekend. There is a wonderful sense of relaxation for me. At home, even if I decide to do nothing, every time I look up or walk into another room, I see things that need doing. With the RV, it's just "aaaaaaaaaaaaahhhhhhhhhhh".
