I think something like this is your best bet. Minimal takedown/setup, easy to drive, all the amenities inside.
Add some solar and a decent battery bank, and you are good for a long time, even without hookups. Another option is to replace the existing toilet with a composting toilet, and combine the gray + black tanks together, so you have one large storage for gray water.
