No particular recommendation other than do what we've done for years on the bikes - just head out, stay well off the major roads, and enjoy the trip and what you find along the journey. In +20 years of an annual 2-3 week vacation traveling like that we've been "stuck" only once, when we rode into town the weekend of a 3-state craft fair...didn't find a motel vacancy until after midnight and ~200 miles away.
