I think that's because they aren't available with a manual transmission any more.

Agreed, no automatic transmission Subaru can be flat towed.

No Subaru can be towed on a dolly, either.
A lightweight aluminum flatbed trailer is a viable option.
Yes, dealing with a trailer can be a nuisance, but it is an option.

Crosstrek and Forester are available in stick.
