Frankly I would rather stay out of it. But I am not going to turn down her request for help.

given the situation you describe, I think the best thing would be for you to ASK a lot of questions which will get her thinking about what she wants and maybe things that she wouldn't have thought of if you hadn't brought it up. Topics to consider always works better for me than actually giving advice directly.
For example
1. How long was the class c you rented and at the time, was it the right size or did you wish it had been smaller or larger?
2. What is the longest period of time you think you will be using it - 2 weeks, 2 months or 4 months or longer?
3. how much stuff do you want to take with you - i.e. cargo carrying capacity - just because it fits doesn't mean the rig is designed to carry that much weight.
4. Where do you plan to camp? Only in Louisiana or out west or back east? i.e. wide open rural places or tight urban areas
5. Do you plan to always have full hook-ups or dry camping? That will lead to a conversation about tank capacities and battery capacity.
