Yeah think about it for a second: If all the tanks are full, where is the water from the fresh tank going to go when you use it to flush the toilet or take a shower? Where will all your... business go when you use the toilet?
The way RVs work is you start out the trip with fresh water. During the trip you use the fresh water for showering, flushing the toilet, washing dishes, where it is transferred from the fresh tank to the gray and black tanks.
Ironically you are probably not far off on your estimate of total weight of the trailer just by filling all the tanks. Full fresh water and your "stuff" generally add 1000-1500lbs of weight to the trailer.
You're probably going to end up in the 6500-7000lb range with a tongue weight of around 800lbs. That's within the safe towing capability of your truck, unless you have a cab full of 250lb linebackers, who like to go kayaking and biking while camping. All that people and equipment will add up.
