We have done a few 500+ mile days in the RV, but they're not that much fun. Long days in the RV are "longer" (more tiring) than in a car. Just my .02 worth.
Only you can answer whether you and your family is up to it. But, also consider that you'll be "learning your RV routine" at the same time.
Seems a bit ambitious for a "first outing". But, I've know people to do crazier things.
I'd only hate for this to turn out to be a bad experience and then make it harder to "try RVing" later.
