As long as it's 7 days one way and not round trip, yes it's totally feasible. With your aged kids, I'm assuming you're in your 30s like us. We'll drive 650 miles/day. Some think that's aggressive, but I believe they are a tad older than us and can drive more leisurely.
My biggest hang up is I'm not sure if you're the camping type. You sound a little, um, "particular" for this type of lifestyle. If you have a hard time with hotels, RVs and campgrounds will be no different. You're close to your neighbors, the walls are thin, some campsites are sand/dirt and not grass, little kids can be up at 6am riding their bikes and playing next to you. You have to be able to roll with it to have a good time.
I would do a trial run closer to home first where you aren't put in a situation that could make yourself and everyone else miserable. If you don't like it, you can always go home. You can't do that when you're 1800 miles from home on a business trip.
