We do south Florida to Utah or parts thereabout every year. Depart Saturday AM and arrive Monday PM. BUT.
We are not new to RVing, we are not in a rented unit that we don't know the mechanical condition of, and there are no kids involved.
7 days as described for us would be just fine. Given the unknowns in your circumstances, I'm not so sure.
