Satisfaction is a result of two equally important things: 1) You're perceived results, i.e. did you enjoy the experience, see new things, learn a lot, save money, etc. and 2) Your expectations.
If your expectations are low, then you will most likely enjoy the experience even if some things go wrong.
The other thing nobody mentioned was a towed vehicle or family car. You need to plan out how your husband is going to get around in Phoenix without a car (Uber, maybe?) and how you will get your groceries while out on the road. Since you only have the class C, that means you'll be driving a huge truck for mundane tasks and only on trips between stops.
I have two kids of my own and just drove from LA to Orlando a few months ago. We've got it down pat and my kids can watch DVDs for hours without complaining. YMMV.
If you are prepared for disaster and unexpected hardships, I'd say go for it. If you think it will be peaches and cream, I'd highly suggest you skip this idea.
