just for kicks. how long on average goes it take you to service bearings per wheel?

I agree, it takes about 30 minutes per wheel. Includes removing the wheel, drum, seal, cleaning and repacking the bearing, brake inspection, cleaning and adjustment, and reinstalling everything.
