The center gets to 700F. I'm not a steak guy but doesnt Ruth's Chris advertise as cooking at 800F?

Lol, its a portable griddle not a high end cooking appliance! And yea , sesoning it takes some time, as does learing how to cook on it. Water, a scaper long spatula thing and a blast hood are key.
