Finally pulled in to a rest stop and cinched up the WD bars one chain link and it helped significantly. Bounce was still there, but we could talk, drink from cups w/o spills and most of all made it easier on my wife.
This is very encouraging! Thanks, zenasboy!
I feel like I've gotten a ton of great suggestions from people who have experienced this and found ways to improve upon it. However, there's some back and fourth on the solutions ("A" worked for me. "A" didn't work for me.) that make me think it's a hit or miss thing to solve it using the various suggestions.
I think the best advice so far has been to accept that it can't be completely resolved in all cases, to slow down, plan routes carefully, and be sure the hitch is set up right.
So far we've only experienced the bouncing on one route - the route that happens to be the best route to the area where my daughter is in school and where we plan to spend a good bit of time camping. I've pulled the trailer on other, similarly constructed roads, and had a much better experience.
As I've said, my first attempt is going to be to take a hard look at that $750 WD hitch I bought! Based on zenasboy's and other similar comments I hope that gives me some improvement.
I sincerely appreciate all of the great feedback and suggestions! I've learned a ton here, and I expect to learn more.
Thanks for the continued comments!
