"Opinions welcomed"
My opinion is you need 3 things first.
1. A good financial advisor, preferably one well versed in commercial real estate and /or the hospitality industry.
2. A good site development contractor that knows the area and has done projects of a similar value.
3. A good Attorney.
And not necessarily in that order.
Then you're going to need a civil engineer, and an architect who also can take care of the electrical engineer and mechanical engineer.
Unless you're located in some Podunk backwater location, the days of just playing it by ear are over in most areas of the US.
