No brainer. If buying new get the 1 ton. Empty it will ride the exact same as the 3/4 ton (except Ram which offers coil 3/4 ton and leaf 1 ton) and it is rated to handle more weight. As noted, the 1 ton has a beefier rear axle. The minimal cost difference now will give you WAY more flexibility in the future.
Don't listen to the nay-sayers... if you don't want or need the diesel, the 6.0 gas has plenty of power. Yes, a diesel will pull better and get better mileage doing it, but the 6.0 will do just fine with your weights.
