I have also thought about doing something like this. I'd do it if I was retired and wanted to travel...sadly that's not the case. I have seen folks remove the backseats in their trucks and put beds in. Sadly, I don't remember where I was reading about that. Does that help almost none? :)
You could also look into mounting a generator in the truck and run that A/C in the camper. I know mine ran all day and into the night and never came close to running out of fuel. That was after the freak hail storm. I'd bolt it down so it can't roll off (if you know what I mean).
