Does this sound reasonable over the length of the trip? I do realize that on some days the actual costs will be higher as well as lower. But, on the long term average, does this seem doable?
Your budget sounds reasonable to me. Just make sure you're not carrying that $5,000 in cash or if you have to, find a damn good hidey hole.
I'd budget at least $30.00 a night for camping spots, then if you stay cheaper, then you're ahead of the game.
Have you budgeted any money for entertainment purposes? Entrance fees to attractions and such? Buying a few paperbacks along the road?
You don't have to eat cheap, just eat smart. Make one dinner last for 2 days, etc.
