A cab over bed only and the rest of it a living, dining, kitchen and bathroom?
Seems to me this would keep the RV small outside and feeling huge inside.

The main reason for what you are seeing is that many adults don't care to climb up into and out of a cabover bed - so they want another bed somewhere else in the Class C.
We're different .... we want two queen size beds with at least one always available at main floor access level for night sleeping and quick naps anytime .... and that's what we have in our 24 foot Class C. The DW has a bad back so needs the entire queen in the rear. I use the queen cabover bed for sleeping, which is no problem for me.
What's "wrong" with a TC for us is those long steps in the rear to have to climb up and down many times a day.
Makes sense. I was hoping somewhere out there this floorplan existed already.
And boy do I know what you mean about the TC entry steps. I jump from the TC bumper to the ground because mine didmt have steps when I bought it. Bone jarring sometimes. And once I did a complete face plant when I forgot I parked on a drop-off. It was much higher than the normal jump. Skinnedy knees and hands and crackedy phone.
