On older planes like the 727, the grey did go overboard regardless of whether the jet was on the ground or in the air. The drain mast was heated to avoid freezing in flight.
Modern jets do not.

Can't speak to the 777 and later but the 767 still had them when I retired in 06. So did the 747-200, DC10-30 and A310-200 when I was flying them.
The new B787 does not have drain masts. All greywater goes into black tank. Pretty sure the A380 is the same. Probably new rules.
