Do what you want, but there are lots of people who ended up with grease on their brakes after trying to use an EZ-Lube type system. Whenever it's time to replace the grease, it's also time to inspect the bearings. Do you plan to skip that step?
FWIW there are instances of people who have ended up with grease on their brakes, and they didn't have EZ-Lube. Of course there are the people who have had issues with their hubs right after a "service", so maybe there's something to be said for "If it ain't broke, don't fix it".
