A lot depends on the route one is traveling.
If you're talking about mindless hours on an interstate across (fill in the blank state -- don't want to offend anyone!), I always have my collection of favourite CDs available to listen to. I enjoy listening to an entire CD by a particular artist, getting to hear lesser known/popular selections that can frequently be as good as the "hits". Music on a CD can be from ~40 minutes to over an hour, so having enough CDs to fill the time is essential.
Taking alternative routes, where small towns are encountered is another way of beating the boredom. They make you pay attention as you're approaching and going through them. And if one is looking for a place to take a break, get out and stretch the legs or use the restroom, there can be alternatives to the usual places on an interstate. Lots of small towns have a city park that's a good place to stop and relax, or other things to see/do in the town.
