I'd say you may need to go semi-custom for replacement. Now there is standard foam, Visco foam and a Gel foam (some cool, some ventilated) toppers in 2-4".
If you find a type of foam that is comfortable and fits the space, you can cut it into the 3 sections.
Or if you prefer find a local foam store where you can test, buy and have them cut to fit. Any zipped mattress cover will usually fold into the 3 sections. You'll only run into problems if they need to be separated and then you'd have to cover each section individually. Not too hard, either, using some flat sheets for covering. Cut and sew like a huge pillow case and then hand stitch the ends shut or fold inside to remove easily for cleaning.
