Generally speaking, can you remove the dinette?

You'd have to determine whether it is simply storage in the built ins, or whether it is equipment such as water heater, furnace, batteries, power converter, wheel wells, etc. Once you narrow down your choices you can poll people here and ask specifically what is under dinette benches.

I've had two RVs with dinettes. One had wheel well under the seat bench. The other has batteries (accessible from outside).
