The Yamaha 2400 will run a 13.5K BTU A/C, but if you are at elevation, running the fridge on AC, or the batteries need a good charge (or even 2 6V's at 80% SOC) it will struggle to start the A/C even with a hard start cap. One of our camping friends has one, 90% of the time it works great.
I went with 2 EU2000i's because they are easier to carry, more power, and I only need to take one on many of the trips.
Have you cleaned the carb out? They are not fond of ethanol gas and will do what you are describing.
I have had 3 EU2000i's (sold one, bought 2 new ones) and they all run great, as long as I don't use gas with ethanol.

My eu2000i has been a turd since new - hard to start and runs rough. My buddies Yami runs circles around it and parts are cheaper.
Next time I would either get the Yami or Champion.
