However you choose to do it, May I suggest a safeguard against accidental melt/refreeze?
Put an ice cube tray full of ice cubes in the freezer, on the top of the food, then put a quarter on top of one of the cubes. After you arrive, if the quarter is still on top, you can be sure the food is safe, but if the quarter has dropped to the bottom of the tray, you will know that things thawed in spite of your efforts, and the food should be discarded as unsafe.
