Help me understand California Turnouts - Updated

I've been in California the entire month of May and I'm not digging driving around here. I started from Las Vegas, NV to Anaheim, CA, then to Los Angeles, Monterey, San Francisco, Yosemite, Clear Lake, and now Humboldt State Park.

My problem is the 55 MPH speed limit on towing. That and the winding roads and I end up with people tailing behind me. Being a good motorist that I am, when I see two or more folks lined up behind me, I pull over at the first turnout or safe place I can.

I've noticed that the turnouts vary in quality. I've seen 50 foot wide, completely paved turnouts and I've seen tiny gravel turnouts with big uneven dropoffs at the side of the road. Inevitably, I end up turning out at a small turnout and 200 yards later, there's a nice one. Sometimes there are signs advising of turnouts 1/4 mile away and sometimes there are passing lanes.

To make matters worse, I've seen very few rest stops on the highways here, particularly, the 101.

So I'm asking you guys for some advice. Do you have any tips or tricks to avoid having to pull over every 5 or 10 minutes to let traffic pass or how to know where to pull over when you aren't familiar with the road?

UPDATE: After reading your many comments and suggestions, I had a much easier time driving yesterday. I let the full contingent of 5 cars accumulate before looking for a turnout. This alone prevented me from having to pull out a single time. But had I needed a pull-out, I would have only sought out marked ones or passing lanes.
