As far as having to subtract for passengers and hitch, that doesn't fully apply to the Tundra or any truck that uses J2807.
The engineering standards allow for two 150# passengers, I know many of us weigh a touch more, and I believe 70# for the hitch.
Those ratings also allow a dually to be just a little slower in acceleration and climbing than single rear wheel trucks.
