I have been doing it year round for almost 4 years. It is just myself and a 50 gallon tank will last me a week. Even during the summer. A couple times I was at a campground that lost power and lost water pressure due to a well. It didn't affect me one bit. I also like using the pump. I do not have to worry about water pressure and I can turn the pump off when I am done and not have to worry about a pipe breaking causing a mess inside the RV.
Once a year I usually winterize when temperatures get in the single digits and escape to a Motel. That may be for several weeks. When I de winterize, I flush and disinfect and start the process all over again. I never had any concerns with water contamination, but I do drink bottled water.
