Good morning. Not sure I follow your train of thought. The residential fridge will run fine on the road whether you are an hour from home or a week from home. The RV would be properly equipped with an inverter and appropriate battery bank. Why would you have to run a generator. The trucks power feeds the fifth wheels battery as per normal. The fridge doesn't use much power. Resale value will depend on the next persons needs. I suspect with most people the residential would be a huge asset and a plus for resale. However, if the person buying was a dry camper then of course it would probably be a no sale.
