520mi is what we did, with a toddler.
I'm going to go against the pack and say that 500 is easily doable. If you have the fuel capacity to maintain a decent average speed; frequent stops will make it difficult.
Our travel that day was pushed longer than we had planned because of a wildfire that threatened to shut down the highway we were traveling. We pushed on into and past the threatened area so that we would not need to backtrack. I will say that I wasn't planning for that distance, but would do it again without a second guess.
I'd do it again, but it isn't out of the norm for me to travel over 700mi in a day without a trailer, or on my motorcycle.
