Actually if you are a professional you should be thanking everyone for their interest in the position and letting them know the position has been filled.
That is part of the public relations part of your job. If I sent you my CV and you failed to respond I would bad mouth you everywhere I could. Furthermore, if I was ever in the position of dealing with your company as an employer I would have all sorts of animosity to your firm going into the relationship. Remember be nice in business everyday because tomorrow you made need the person you PO'd today.
As for not being physically possible to respond that is pure BS. With a good database program and word processing software a letter/postcard could be sent with very little effort. Not responding in my mind shows a lack of appreciation and shows no respect for the applicant.
