If I understand, the front jacks were not all of the way down. Setting up, the FIRST thing I do is to put the front jacks down. The LAST thing before pulling away is to release the hitch.
I don't understand "in case I have to get under the pin if it won't pull...". To release the hitch on my Husky hitch, the jacks have to be extended so that most of the trailer's weight is off the hitch, and then the hitch's arm is easy to pull out.
if the jaws wont open, I might have to back into it just an inch or so to release the pressure on the fifth wheel plate.
If you have chocked the wheels the 5er will not move an inch! My landing gear is likely extended at least 18" to touch the ground, even if you did manage to move the 5e an inch, no stress on the landing gear!

Chock both sides of the trailer FIRST ALWAYS!
Drop the Landing gear solid contact with the ground taking weight of 5er.
Release pin, if you need to take the strain off, place transmission in reverse with foot on brake,release parking brake, then just slightly release foot from brake pedal. Reset PARKING brake! That is all it takes to release the pressure.
Heck I can release the pressure, and I have a manual, with that extra pedal.
