I think your plan will work very well. Remember... you don't have to stay in one climate year-round. You've got wheels. Find a warmish winter spot and a cool summer spot. You mentioned Dallas - it gets cold and hot there - not a good place for year-round RVing. Even Arizona has a great year-round temperature - desert for winter and mountains for summer.
