In my experience, Amish workmanship is very good, even in RVs. But they don't get to design the product or chose the materials. There's only so much you can do with pressboard, 1x1 pine, lauan, and staples so the manufacturer can sell a 20' TT which can be towed behind a minivan.
I just completed 48 apartments, two buildings of 24 each and 4 garage buildings with a total of 48 individual garages. My framing contractor used Amish crews. They had the horses to put on it so it went together really fast but if you want things plumb, level, and square, forget it. It took twice as long to do the framing punch lists and have all the corrections done, than it took to get them under roof and dried in.
Total hacks the Amish, but you can only do so much with 2X6's, 2X4's, 3/4" plywood, and engineered roof and floor trusses I guess.
