This one is probably a little bit on the lower side of what you're looking for Sevylor Fiji kayak. I bought this for myself and the kids to use. (didn't want to take up the space that a hard-sided kayak would take) While it's not as nice as a hard-sided, it gets you out on the water and gives you some exercise. I've only had it about a year but we've had on the inter-coastal waterway in FL and lakes in IL. If you buy one I would recommend buying the optional skeg for it.
