12Vs fabricated "issue" and photo op of his 5ver mods is totally irrelevant.
I can think of several ways to get a single axle trailer off the ground to change a tire. It's a non issue...
Back to the question at hand, how much weight are you going to haul?
Metallurgical crafts or sticks and string and fabric crafts?
Having owned, towed, or repaired literally dozens, maybe hundreds of utility and cargo trailers over the years, single = less$, easier to move around by hand, tow easier and slightly bouncier rode for the trailer contents.
Brakes? There's a reason theyre nit required on sub 3klb gvw trailers.
Not necessary unless the tow vehicle is not a full size truck or SUV.
Bottom line, single axle makes the most sense from virtually every aspect for the OPs application unless you need the cargo weight capacity. And if you do, typically you'll have to go to a 7' wide minimum to get tandems on such a short trailer.
Single axles are easier on tires too.
