Congrats on the new health! I'm sure you feel like you're much more able to *enjoy* life now, including RVing.
We have a Cuisinart version of the same thing...it can be set up flat as a griddle, can be a panini press, and it has removable plates so we can use flat ones or the ones with the raised grill lines. And it has adjustable temps, too.
We used to have a Foreman but it didn't have those options. I'm sure a newer model does, and we really like the flexibility in how we use it. I'll lay it flat to make pancakes for the kids, then make whole-grain and fruit pancakes for us. Then we'll swap the plates and make chicken breasts for lunch.
I think this one was on sale at Kohl's so the price was about the same as a Foreman with fewer options in the other stores.
