Pianotuna beat me to this one. I often recommend such a process for folks with no RV experience who want to just jump full time. This experiment won't cost you anything and you'll be right at home safe.
Also, imagine yourself working, driving, enjoying the sights, and maintaining/supplying the RV and the dog all within the same chunk of time. Are you sure you cannot take some long vacations just for travel and some time at homebase just for work?
