I think your plans are completely feasible if you are willing to spend a couple hundred dollars a month for internet access as you mentioned. Going far off the beaten path might be problematic, but otherwise, with the proper equipment, you should be able to have internet access most of the time.
I am an independent web site developer. Although I do not require internet all the time, it makes my job easier when I have it. We camp seasonally for about 4 - 5 months each summer, we stay in one campground for the entire trip. We are fortunate that the campground owners offer internet access and allow me to use equipment to bring their decent enough WiFi signal into my own router. I use about 6 to 7 GB of data a month. They give me about 7 - 10 Mbps download and upload speed, which is sufficient for my needs.
If that internet was not available to me, I'd be using my Smartphone as a Wifi Hotspot for WiFi and would probably need a 8 GB/month plan from Verizon. Most likely you will find that Verizon has the best service throughout the country. There are probably spots where At&t or another provider has better service, but across the country, your best bet is Verizon. Get a decent size (GBs) plan from Verizon and decide after a few months how much you really need. Then get that size plan to maximize the value.
I wouldn't waste your money being mentored by one full timer; you mentioned Technomadia. They are very successful at what they do, however everyone's experiences are different and you may find the way they full time might be completely different than yours. There are a lot of full timers with blogs. Read the different blogs and get an idea of what everyone does so you can decide what best fits your lifestyle.
Since you plan to keep your house, it sounds to me like you should just pickup and do it. You may not be all that familiar with RVing, but none of us were before we spent time in a RV. This message board and others offer pretty much everything you need to know and if you can't find an answer to your questions through searching, post them up and they will get answered.
Good luck!
