You have to find the sweet spot between highest safe speed and fuel economy.
For example if you can safely pull at 75 but get 5 mpg, is it worth it?
If you can pull that same load at 60 and get 12 mpg, is it worth the longer trip?
Personally I stay around 67-70 when towing. I get fuel mileage that I can live with and I get there faster. 2000 mile trip at 10 mph faster saves a respectable amount of time... provided I am not wasting all that "saved" time by stopping and getting more fuel!
