A lot of us, as you have seen, have mastered cooking with these otherwise terrible RV ovens. One problem is they get WAY TOO HOT on the bottom and tend to burn things on the bottom if you're not aware of what's going on. The Pizza stone or ceramic tile trick is mandatory IMO to help even out the cooking. The other problem is the temps are way off so you never truly know what temp you're cooking at. Calibration of the knob, the oven thermometers, etc, are one way to get the temp right.
Other than those challenges which can be overcome, they work great for cooking and baking! My wife now bakes cookies and all sorts of things in ours. Good luck.
