Check with WV about registration grace period. Most state allow you to operate an unregistered and newly acquired vehicle a number of days (usually between 7 and 15) before registering it.
Personally, I wouldn't worry about it. If you have all the paperwork in line, I would just drive it. We lost our plate one the way to a rally three state away (the bracket broke). We were not bothered at all. I did have all the paper work in a file on the dinette the whole time.

An excellent recommendation.
Missouri used to have a grace period, for transportation purposes, after buying a vehicle, and you could get by without a license plate. Not anymore. Now you have to have either a permanent license plate or an temporary (paper) license plate for it to be legal to drive on Missouri roads. The only exception is driving to get the vehicle inspected. Always a good idea to know the regs before you get stopped.
Personally I'd get the paperwork done, take off, and hope for the best. Easier to ask for forgiveness than permission...mostly.
