Comfortable ride is about 90% tire pressure and 10% what tire you're running, IMO.
Don't automatically assume 80psi is what you need in back just cause there's a sticker saying it. Depends how much weight, and size of tire for what is the "proper " tire pressure.
Personally with a 2wd truck I'd want at a minimum AT tread tires for the less than ideal conditions, but depends what you will encounter.
Tires are one thing I'm not brand loyal about at all. I have reccomedations, but my use differs greatly from yours.
One thing to help the ride and tire capacity is ditch the 245 donuts and run 265s on your 2 wheeler, IMO.
I'd hit Amazon for the best deal you can find, within reason. I don't really trust off brand tires. You should be able to find a good set of ATs for around $600 to your door.
