I usually make a large batch of spaghetti with very meaty sauce the evening before a trip, and freeze a bunch of it in individual-portion sized containers. Defrost and heat up in the microwave while parked in a rest area or truck stop, shake a little Parmesan cheese onto it, and chow down.
And /or do the same with my home-brew all-purpose taco filling (browned ground low fat turkey, corn, onions, tomatoes, salsa, & taco seasoning), corn chips, and cheese.
