Your plants will not be happy, especially the tomatoes! And when you consider how long it takes to get ripe ones in an ideal growing situation, how much space a big plant takes up, and how heavy a container can become, I'd vote no. Lettuce (any type of salad green really) is another story, if you are in one place for several weeks or so get some seed and go for it, empty the pot and start again at the next stop.
