I just went through this with a 1999 van I converted.
I hit a horse in the head with the right front headlight area. Headlight assembly ruined, slight buckle of quarter panel, some bending of hood and AIRBAGS DEPLOYED.
Went to an approved repair facility--$6200 damage, mostly airbag replacement.
Insurance company said it was totaled and would pay me around $5000. It was worth way more. I found a local repair facility that would do it for $1600. I told the insurance company I wanted it back and we settled on $3900.
The big difference in prices was that the cheaper one repaired the damage and used completely legal recycled, not deployed, airbag assemblies while the expensive one wanted to replace all dented parts and use brand new airbag assemblies.
I think you need to see if it can be repaired more cheaply and take the cash and vehicle. If you can't, take the cash and sell the parts on craigslist.
