My DW is from NZ and is currently there. Years ago we tent camped out of our son's station wagon. Most CG in NZ have kitchens available to all. This reduces the need for a large RV kitchen and the delicious smells and mix of people from all over the world cooking is a unique experience.
Trust me, you do not want a huge class A on rural NZ roads. The main North/South hwy has one way bridges controlled by right of way arrows. A van type camper is about right.
That being said, it is a beautiful country and a month camping in the South Island was just about right.
Just another hint weather wise. When doing the coasts of the South Island start on the North and West side, then head South. Then cross over to the South East side. Do take the ferry to Stewart Island if you have time. Then head North up the East side towards Christchurch. The reason is that low pressure areas come out of Anartica and usually favor the West side of the island. By heading South first you reduce the risk of traveling the same direction as the low pressure area. That is what the tour busses do all the time.
I was able to tick a bucket list item off while there. I went up in a glider in what is called the glider capital of the world. (Can't recall name) it is in the Southern Alps near Mt Cook the highest in NZ. Wow what a site! At 13000 ft the pilot gave me the control. 1 1/2 hr ride cost all of about $50 US and no paperwork to sign, just climb in and go.
Gore calls itself the Brown Trout capital of th world and they are indeed plentiful there. The DW drove along streams and I had her stop at many pools. Good luck.
